Betula lenta
While considered both an ornamental and timber tree, Sweet Birch (aka, Black Birch), is rich with edible and medicinal uses. The bright wintergreen flavor of the twigs, bark and leaves makes for a tasty tea that is anti-inflammatory and helps with indigestion. The tree can also be tapped in early spring for sap. Sweet Birch provides larval food for Mourning Cloak and Gray Comma butterflies, and the seeds are a favorite food among songbirds.
